Raw Strawberry Cheesecake


This was a fun dessert to take pictures of!  Cheesecake has got to be one of my all time favorite desserts.  This cheesecake is completely a healthy one that tastes delicious.  I enjoy making desserts for other people in my family and in my neighborhood.  Some of my most adventurous days have been in the kitchen whipping up something new and scrumptious.  Sometimes the food you cook or fix is completely the opposite from what you thought it would be.  That's probably how the greatest chief's made their unique dishes like pizza or ice cream.  It's just pure genius to think of something so awesome.




Raw Strawberry Cheesecake 


Crust Ingredients:

  • 1 cup soaked almonds
  • 1/2 cup thinly shredded coconut
  • 1/4 cup coconut butter
  • 15-20 dates
Preparation:

1. Soak the almonds for 8-12 hours.  Soak the dates for an hour to soften them.

Directions:

1. In a food processor, blend the dates until they form a paste.  It's okay if they form tiny chunks.  Put the dates in a medium sized bowl and stet aside.  Blend the soaked almonds in the food processor and then add them into the bowl of dates.  Mix the ingredients with a spoon. 

2. Now, press the crust onto a small/medium pie dish or springform pan and place it into the freezer and make the filling.



Filling Ingredients:

  • 1 + 1/2 - 2 cups strawberries
  • 3 tbsp lemon juice (optional)
  • 4 packets stevia powder
  • 1 + 1/2 tsp vanilla extract
  • 3/4 cup cashew butter
  • 1/4 cup coconut butter
  • 1/2 zucchini (peeled)
Directions:

1. In a food processor, blend the strawberries and the peeled zucchini.  Add in the rest of the ingredients and blend until creamy.  Spread the cheesecake filling onto the crust.

2. Place the cheesecake into the freezer for 3-4 hours.  Take the cheesecake out when the filling is more firm to have a solid and creamy consistency.

3. Top with strawberries, coconut whip cream or whatever you like.
